RECIPE: NECTARINE AND BASIL SUMMER COCKTAIL

There are so many wonderful combinations when it comes to basil. It goes with just about everything, which is why it makes it the perfect cocktail ingredient. In Summer, with gardens growing plenty of this delicious herb, it’s as simple as choosing your flavours and stirring. With the gorgeous Summer weather spilling over into Autumn, why not enjoy a sneaky mojito in the garden with evening!

There are lots of great flavours you can pair with basil. Add it to a base of gin or vodka (or any favourite liquor) and then play around with fruity additions. Plum is a lovely pairing, as is cucumber or citrus fruits like lemon or lime.

We’re in love with this delicious recipe from Set The Table. Combining one of our favourite summer stone fruits with basil and rum – although we love switching it out for gin and adding extra basil, because why not?

NECTARINE MOJITO WITH BASIL BY SET THE TABLE

Makes one cocktail.

INGREDIENTS

·       1/3 ripe nectarine, thinly sliced

·       1 ½ oz. white rum (or gin)

·       1 Tbsp. lime juice

·       1 large basil leaves, thinly sliced (we like to use 2-3 leaves)

·       3 mint leaves

·       Sparkling water

·       Crushed ice

·       Basil leaves, nectarine slices, and lime slice for garnish

METHOD

In the bottom of a glass, muddle your nectarine slices with the rum, lime juice, mint and basil (this is also where you would add any sweetener, if using).

Add ice to the glass, followed by a splash of sparkling water.

Garnish and serve!
